Christmas Cupcake Log


Both my son and my husband like cupcakes I bake. Thinking about my loved ones, few years ago I created a ‘contemporary’ Christmas log. And yes, this cake is based on the recipe for a cupcake with a filling.

Since then my family always ask me to make another one, as they like it so much.

I like to decorate the log with coconut flakes which gives the cake a festive winter look.

Cocktail cherries, candied fruits or fresh berries make the log very dressy. Bright speckles of pomegranate seeds are also great here – they are like little gems reminding of Christmas miracles.

If using cocktail cherries, add them at very last moment, just before serving, otherwise they will leak the red syrup and spoil the look of the cake.

Christmas Cupcake Log



  • 1 ½ cups all purpose flour (I use unbleached)
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • 2/3 cup sugar
  • 1 ¼ stick (5 ½ oz / 150 g) butter, melted
  • 2 eggs at room temperature
  • 2 tsp vanilla extract
  • ½ cup milk
  • Jam, jelly for filling


For cream cheese frosting: 

  • 2 cups heavy cream
  • 3-4 tbsp sugar
  • 4 oz (100-150 g) cream cheese at room temperature

To complete:

  • 1 tablespoon cocoa
  • hazelnuts (whole and chopped, or other nuts)
  • Coconut flakes
  • Cocktail cherries, candid fruits, pomegranate seeds, fresh berries




Preheat oven to 350 F (180 C).

Grease a loaf pan or a terrine form with butter or oil.

In a medium bowl, mix together the flour, baking powder and salt.

In a large bowl or a mixer bowl, using an electric mixer, beat the eggs and sugar until foamy while adding the melted butter and vanilla extract. Whisk for about 2 minutes.

Add about one half of the dry ingredients to the egg-sugar mixture and stir gently just to distribute the components evenly. Important!: do not over mix. Add the milk, then the remaining flour mixture.

Put the dough into the baking form.

Bake for 30-40 minutes. The top of the ‘cupcake’ should be pale golden and a toothpick or wood skewer inserted in the center should come out clean.

Leave the cake in the form about 10 minutes, and then cool completely on a rack.

Holding a sharp knife at an angle cut of the top of the log creating a V-shaped hollow. Fill the hollow with jam and cover it back with the cut off top.

Coat the top and the sides of the log with cream cheese frosting. Dust the log with cocoa or sprinkle with the coconut, and decorate with nuts and fruits.


For cream cheese frosting:

With electric mixer slightly whip the cream. Add sugar and beat until thick.

Add cream cheese. Beat until creamy.
