Apple-and-Pomegranate Salad


Honeycrisp apples are the most delicious I ever tasted. These apples are cultivated in the United States and, unlike many other available varieties, they only appear during the apple season.

The taste of Honeysrisp apples is a testimony to their name – they are moderately sweet with a hint of honey note, have delicately light acidity, firm texture, and are crunchy to bite.

This season I am already enjoying these apples as a delicious snack. I am also adding them to salads where, in my opinion, they are ideal.

This simple salad with apple and pomegranate is delightful and refreshing. It has so much to taste in every bite: sweet and salty, sour and fresh, creamy and crunchy. This combination is great as a salad or as a side dish for a light supper. Simple roasted chicken with Apple-and-Pomegranate Salad will create a magnificent dinner.

Apple-and-Pomegranate Salad


2 servings


  • 4 cups baby arugula or 6 cups baby spinach
  • ½ large honeycrisp apple, cored, sliced or cubed
  • ¼ cup pomegranate seeds
  • ¼ – 1/3 cup crumbled fresh goat cheese (or good feta)
  • ¼ cup chopped or slivered almonds
  • 1 tablespoon lemon juice
  • Coarse salt
  • Black pepper
  • 1-2 tbsp extra virgin olive oil




Arrange the arugula (or spinach) in a salad bowl or a platter. Add the apple slices. Sprinkle the apples with the lemon juice.

Add the pomegranate seeds, goat cheese and almonds. Lightly sprinkle with salt and black pepper and drizzle with the olive oil.
