Bacon Wrapped Pork Chops

 

2 servings

Ingredients

  • 2 boneless pork chops (pork loin) 1” thick (2 ½ – 3 cm)
  • 2-4 strips bacon (can be smoked, the quantity depends on a chops diameter)
  • Salt
  • Black pepper
  • Olive oil

 

 

Preparation

Position an oven rack 4-5″ (11-13 cm) from the heating element.

Set the oven to Broil / 500 F.

Pat dry pork chops with a paper towel. Brush the meat with the olive oil and season with salt and pepper.

Wrap the bacon strips around each chop (not too tight). Secure the bacon with wooden toothpicks.

Place the chops onto a baking sheet (line with foil, if desired) or a cast-iron skillet, broil for 7-8 minutes. Flip them over and broil for another 4-5 minutes. The internal temperature of the chops should be 145 F (63-64 C).

Transfer to a platter and let stand for 2-3 minutes. Discard the toothpicks and serve.
