Mouthwatering and quite attractive burrata salad has been one of our family favorites for this year.

In summer, when tomatoes were at their pick, I made this salad with homegrown cherry tomatoes and fresh herbs.

Today, when pears are so good, bite by bite, I’m enjoying the burrata and pear salad. The tasting palette on the plate is fantastic. Sweet and salty, juicy and creamy, crunchy and tender – I appreciate all presented taste buds present here.

Fresh burrata cheese is incredible and it doesn’t need to be ‘overdressed’ – just add some peppery arugula, zesty lemon and fragrant olive oil. This is it. Some sweet notes (from pears or tomatoes) are appreciated. Pomegranate seeds will make the taste and texture more complex.

This salad can make an eye catching and delicious lunch or brunch. It can also be served as a ‘cheese and fruit’ dessert plate or as a light meal with a slice of salty and earthy prosciutto, accompanied with good crusty bread and a glass of wine. Delicious any way!

Preparation

Drizzle lemon juice over the pear slices.

Spread arugula on a platter or salad plates. Arrange the burrata balls on arugula. Add the pear slices. Season the salad with salt and pepper and drizzle with extra virgin olive oil. Sprinkle with pomegranate seeds.

Ingredients

  • 4-8 cups baby arugula
  • 4 burrata cheese balls
  • 1-2 pears, quartered, cored, sliced
  • 1/4 lemon juice
  • coarse sea salt
  • freshly ground mélange pepper (or black pepper)
  • extra virgin olive oil
  • pomegranate seeds

Instructions
