Celery Apple Salad
This is one of my favorite salads: light, fresh, juicy, crisp and with a rich taste. It is perfect by itself as a salad, but could be a delicious side dish for chicken, fish or meat.
The salad looks very attractive when served in a nice glass salad/dessert bowl, wine or martini glasses or in a cup of fresh crispy lettuce. A wonderful salad for gourmet food lovers.
- 2 sticks of celery, cut into matchsticks 1 ½ – 2” long
- 1 apple, peeled, cored and cut into matchsticks 1 ½ – 2” long
For the dressing :
- 3 tbsp extra virgin olive oil or grapeseed oil
- 1 tbsp lemon juice
- 1 tbsp whole grain Dijon mustard
- 1 tsp honey
- Black pepper
Whisk all the ingredients for the dressing.
Mix the celery and the apple in a bowl.
Pour the dressing over the salad. Gently mix the salad. Chill.
