I was happy to taste this recipe for a French company Bonduelle, the company that produces canned and frozen vegetables all over the world. I enjoyed writing about their products in my Russian language blog. Since that time, chicken breasts with green peas and herbs became our family frequent weekday meal.
I changed the recipe to my liking while keeping its major concept. The dish turned out great. We (my family) were very pleased with a tender and juicy bite size chicken, delicate grassy peas and silky sauce. The dinner was made in just half an hour.
This chicken can be served ‘family style’ – in one casserole (gratin, lasagna) glass or ceramic dish, or in individual ramekins, which makes the presentation more elegant.
In a bowl, mix the sour cream, heavy cream, green peas, herbs, salt, pepper, and cayenne pepper.
In a wide pan, heat the olive oil. Add the chicken pieces, season them with salt and pepper, and cook until light golden for 3-4 minutes.
Add the garlic and cook for 1 minute.
Preheat an oven to 425 F (220 С).
Transfer the chicken into ovenproof dish (or individual ramekins). Pour sour cream sauce on top.
Bake for 15-20 minutes (for the ramekins – 12-15 min.).
Serve with rice, pasta, potato or vegetable puree, or/and good bread.
