Chipotle Mayonnaise and Chipotle Mayonnaise with Pickles
I love sauces. On par with herbs and spices they add a variety and make dishes richer in taste and appearance. In particular, I am very interested in mayonnaise based sauces. They are good not only as salad dressings, but also can be used as a base for dips or as a wonderful addition to sandwiches.
Recently I prepared Avocado Mayonnaise which had a good taste and interesting and unusual green color. This time I would like to add red chipotle mayonnaise to my sauce collection. It is not really red, but it has a wonderful deep salmon color. Hot and tasty, it is great for burgers, poultry, fish, meat or vegetables. Roasted potatoes or fries with a bit of chipotle mayonnaise make it an ideal tasty combination. Sandwiches and wraps will also sparkle with new color and flavor.
For burgers I like to combine chipotle mayonnaise with pickled cucumbers (remember the tartar sauce). A win-win combination! To make a milder sauce or a dip I mix chipotle mayonnaise and sour cream in equal proportions. This creates a nice pale color and smoother taste.
So, today I‘m preparing the sauce: pink, creamy, and hot – all in one jar…
- 1 cup mayonnaise, homemade or good quality store bought
- 1 chipotle pepper with adobo sauce
- 1 clove of garlic
- Juice of ½ lime
- ½ tsp sugar
- Black pepper
Mix all the ingredients in a blender or food processor.
Store the mayonnaise in a container in a refrigerator.
