Christmas Coffee Cake


During Christmas time we are often talking about baked goods. For about a month our houses smell like little bakeries. All types of cookies and cakes are being baked, packed and are ready to become a lovely holiday gift or a family treat.

At this special time of the year I like to make a very simple Christmas cake, which is not overloaded with candied fruit and spices is so good with a cup of hot cocoa. Pomegranate seeds used for the cake decoration look stunning and add such an interesting tasty note to the cake. Of course, you can use nuts, dried fruit, candied fruit, maraschino cherries and fresh berries for a very rich looking cake. Green, red, yellow – all these jeweled colors and different textures will create a truly holiday mood.

As for me, I am very happy with this simple yet elegant delicious Christmas pomegranate wreath.



one cake


  • 1 ½  stick (175 g) butter at room temperature
  • 1 cup sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 1 cup sour cream or plain yogurt
  • 2 ¼ cups flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • Butter for greasing forms
  • 1 ½ cup of a mixture of candied fruits, dried cranberries, raisins, nuts, other chopped dried fruits

For the glaze:

  • 1 ½ cups powdered sugar
  • 2 tbsp heavy cream (about, maybe a little more)

To decorate :

  • pomegranate seeds or candied fruits, nuts, berries, colored sugar and so on.




Preheat oven to 350 F (180 C).

Grease a cake pan with butter.

In a mixer bowl work together butter and sugar until fluffy and creamy.

Add, one by one, the eggs and vanilla extract.

Add sour cream (or yogurt).

Mix flour, baking powder, baking soda and salt. Add to batter. Stir.

Add candied fruits, raisins, nuts and so on. Stir.

Pour the dough into the cake pan.

Bake for 35-45 minutes. Check the cake with a wooden toothpick. If the toothpick comes out of the cake center clean, then the cake is done.

Cool slightly in a cake pan. Remove from the mold. Cool completely on a cooling rack.

Use a fork or a whisk to cover the cooled cake with sugar glaze and immediately decorate with pomegranate seeds.


For sugar glaze:

Mix powdered sugar and cream until smooth.
