When it comes to hot summer weather my gastronomic preferences are simple: grilled food, cold soups, fruits and berries or granitas and sorbet for dessert.

As for the summer cold soups, I make them from… almost everything. Tomatoes, cucumbers, avocado, celery, sweet peppers, green peas, strawberries, cantaloupe, cherries, or watermelon – these summer gems go into my blender. Not all of them at the same time, of course. You understand.

Garlicky tomato gazpacho, velvety avocado, creamy strawberry and minty cantaloupe soups are so delicious, so refreshing, that you want to make them again and again.

My summer ‘soup du jour’ is a flavorful cold cucumber soup. I’m never tired of it. To bring some variety to the soup I’m choosing different garnishes – from simple and aromatic croutons to spicy and juicy shrimps. By the way, this is one of the best options to use leftovers from a shrimp cocktail or grilled shrimps.

The soup flavor notes can be easily changed by replacing fresh basil for parsley, cilantro or green onion; moreover, for a shrimp marinade you can use your favorite spicy chili sauce (sweet chili, sambal oelek, sriracha, buffalo wings, etc.).

No matter what you choose, you will always get a pleasant result – a delightful silky and refreshing soup with a zesty crunchy topping for a summer comfort.

Instructions:

In a bowl mix the shrimps (whole or large pieces) and sriracha sauce. Let it marinate while making the soup.

Process all the ingredients in a blender. For a desired consistency add less or more boiled chilled water or ice.

Serve the soup in bowls, cups, glasses or ramekins (as an appetizer), garnish with spicy shrimps and fresh herbs.

Ingredients

  • 2 lb cucumbers , peeled and cut into chunks
  • 2 sticks celery , with green leaves, coarsely chopped
  • 1/2 cup chopped sweet onion
  • 2 medium cloves garlic , coarsely chopped
  • ½ - 1 green jalapeno , chopped, or pinch of cayenne pepper (optional)
  • 1/2 cup fresh basil, parsley, cilantro, green onion or dill , loosely packed (optional)
  • 1/2 lemon or lime , juiced
  • salt
  • ground black pepper
  • 2 tbsp extra virgin olive oil
  • 1/4 -1/2 cup chilled water or ice (if needed)

For garnish:

  • 8 oz cooked shrimp , any size
  • 2 tsp sriracha sauce
  • fresh basil, parsley, cilantro, green onion or dill

Recipe Notes

For vegetable version eliminate the shrimps.
