These pork chops turned out incredibly creamy, juicy and tender.

It doesn’t matter what type of chops to use – it is equally delightful when made with bone-in pork chops and for a healthier version with pork sirloin cuts of meat. It is a good and tasty upscale alternative to grilled or fried meat. Mushrooms and pork is a great classy combination. With melted cream cheese, this alliance is even more delicious.

Instructions:

Wipe the mushrooms with wet paper towel. Chop the mushrooms.

In a frying pan, heat the olive oil. Add the onion and sauté for 3-4 minutes. Add chopped mushrooms and garlic, cook for 5 minutes.

Stir in the cream cheese. Cream cheese will melt slightly.

Add the Parmesan, bread crumbs (if using) and spices. Stir. If needed, add salt and pepper.

Put the pork chop on a cutting board.

With a sharp knife make a pocket in the chop. Repeat with the rest of the chops.

With a spoon, fill the pockets with the mushrooms-and-cream cheese. Secure the pockets with toothpicks.

Sprinkle the chops with salt and pepper. Optionally, rub with the seasoning to taste.

Ingredients

  • 4 pork chops (boneless pork loin or bone-in pork chops)
  • 4-6 medium mushrooms (champignons or baby bella)
  • 2 shallots , finely chopped
  • 2-4 cloves garlic , diced
  • 4 oz cream cheese
  • 1 tsp dried oregano or thyme
  • 2 tbsp grated Parmesan or other hard cheese , preferably sharp
  • 1 tbsp breadcrumbs , (optional)
  • pinch of cayenne pepper or a few drops of Tabasco sauce
  • 1/2 - 1 tsp paprika or other seasoning for pork , ( optional)
  • salt
  • ground black pepper
  • 1 tbsp olive oil for cooking
