When I am thinking of my Thanksgiving menu I am trying to balance a heavy (and, of course, delicious) turkey meal with lighter salads and/or appetizers.
On the other side, I like to bring some autumn notes to the dish. Pumpkins, pears, apples, oranges, grapefruits, pomegranates, nuts, and seeds are my best friends for holiday salads. They add a superb taste, texture and freshness. Light and healthy salads are a really enjoyable addition to a holiday feast, whether Thanksgiving or Christmas.
This simple salad is terrific for the upcoming Thanksgiving dinner. It has everything: tartness, crunchiness, creaminess, juiciness, and autumn mood. And it is also ideal for a turkey meal menu. I can’t wait to share this marvelous platter with family and friends.
In a pan, heat 1 tbsp of olive oil. Add the apple cubes and brown them on high heat for 1-2 minutes. Add the balsamic vinegar and deglaze for 1-2 minutes.
On a platter, arrange the salad greens, top with warm apple cubes, drizzle with extra virgin olive oil, and lightly season with salt and pepper.
Sprinkle the salad with pomegranate seeds and almonds.
As an option, fresh goat cheese, blue cheese, feta or Parmesan flakes can be added.
Walnuts, pecans, pistachios, or hazelnuts can be used in place of almonds.
