Traditionally, a Greek dish gyros (or gyro) considered to be some type of wrap with a pita bread, meat (sometimes chicken), onions and fresh tomatoes. All this is served with the most delicious tzatziki sauce.
I decided to step away from a classic dish and prepared my gyros with grilled chicken, caramelized onions, mushrooms and peppers. As for fresh vegetables, I served them on a side as colorful and refreshing Greek salad.
We really enjoyed a wonderful dinner in a Greek/Middle Eastern style. Great for summer!
Grilled Chicken Gyros (Gyro) with Caramelized Vegetables and Tzatziki
- 4 pita bread (preferably no pocket)
- 1 medium onion, sliced
- 1 bell pepper, cored and sliced
- 1 large portobello mushroom or 4-6 white bottom mushrooms (or cremini), sliced
- Black pepper
- 2 tbsp white wine
- Olive oil for cooking
- Tzatziki sauce for serving
- 2 boneless chicken breasts
For the marinade:
- 1-2 tbsp olive oil
- 2 tsp lemon juice
- 1 clove of garlic
- ¼ – ½ tsp hot pepper flakes
- ¼ – ½ tsp ground coriander
- 1 tsp dried oregano
- ½ tsp dried marjoram (optional)
- ½ tsp dried sage (optional)
- Black pepper
Put the chicken breasts between two pieces of wax pepper or cling wrap and pound them slightly to give the same thickness.
Mix all the ingredients for the marinade, add chicken. Cover chicken with marinade and let marinate for at least for one hour (4-8 hours is better). You can marinate overnight.
In a frying pan heat the olive oil, add the onion and cook over medium heat for 5-7 minutes. Onions should be slightly browned and translucent.
Add the mushrooms and sauté for 5 minutes.
Add the pepper and sauté for 4-5 minutes.
Add salt, black pepper and the wine. Cook for 1-2 minutes.
Bring the chicken to a room temperature (remove it from the refrigerator in 30 minutes before cooking.
Grill for 6-7 minutes on one side, flip over and cook for another 5-6 minutes.
Cool the chicken slightly and slice into thin strips.
Put the vegetables and the chicken strips on the pita bread. Pour the tzatziki sauce on top.
The chicken and the vegetables are juicy, so have extra napkins or wrap the gyros in foil.
