This asparagus recipe is one of my favorite. I will say even more, when I’m cooking an Asian style salmon, I’m always preparing the soy sauce-and-lime marinated asparagus. They (the fish and the vegetable) make an ideal marriage couple.

This asparagus can be cooked on a grill and on a stove (in a pan or grill-pan).

Oriental sesame oil is aggressively flavorful but a few drops of it make the asparagus more interesting, creating a more complex flavor.

For grilling I prefer using the thickest asparagus possible – the asparagus tips will not dry before they are cooked.

This soy sauce-and-lime marinated asparagus makes a simple but luxurious and delicious light dinner when served with Asian marinated grilled salmon (the recipe will follow soon).

Grilled Soy Sauce-Lime Marinated Asparagus

Ingredients

  • 1 lb asparagus (preferably thick), trimmed and peeled on a lower part
  • 2-4 cloves garlic, minced
  • ½ – 1 tsp grated ginger
  • ¼ – 1/3 cup soy sauce
  • 2 tbsp olive oil (or canola oil)
  • Juice of 1 lime or lemon
  • A few drops of sesame oil 

 

 

Preparation

In a dish mix the garlic, ginger, soy sauce, lime juice, sesame oil and olive oil. Add the asparagus; carefully coat the spears with the marinade. Marinate for approximately 20-30 minutes at room temperature.

Grill the asparagus on direct medium heat for approximately 4-6 minutes, turning occasionally. Or fry it in a pan, for about 8 minutes.
