Hasselback Potatoes got their name from the Hasselbacken hotel in Stockholm, Sweden.
This dish was born there, in the kitchen of the Hasselbacken hotel.
It is a great way to cook potatoes, moreover, it is incredibly tasty. I am offering you three options of Hasselback potatoes with different flavors: cheese, bacon, and herbs.
For a piquant taste, I made one potato with blue cheese. You definitely can use any other cheese to your liking. The mixture of cheese and garlic is everybody’s favorite in this dish.
You will bring a new touch to the potatoes when sprinkle them with aromatic breadcrumbs (a mixture of breadcrumbs and spices and/or herbs).
Italian seasoning, herbs de Provence, pasta seasoning, Cajun seasoning, freshly grated orange zest, small pieces of bacon or other smoked meats – all these could be used for making Hasselback potatoes.
Generally speaking, add your fantasy to this dish and have fun.
When baking potatoes you might cover them with aluminum foil for the first 30 minutes of cooking. Then remove the foil.
- 3 medium potatoes
- 1 tsp Herbs de Provence or any other to your taste
- 1 tbsp blue cheese per potato
- 1 strip of bacon per potato
- ½ tsp garlic powder per potato
- Olive oil
Preheat an oven to 400-425 F (200-220 C).
Wash the potatoes. Dry them with paper towel. If the potatoes are very round and are not “standing” on the cutting board, cut off a thin slice from the “bottom” of the potatoes.
Incise each potato across. To do this:
Put the potato on a wooden spoon and with a sharp knife carefully make vertical cuts. Knife will stop at the edge of the spoon, and will not cut the potatoes through.
Lay down two wooden chopsticks or barbecue skewers. Put the potato on them.

Cut the bacon into small pieces and put the pieces into the slits of the first potato.
Place the potatoes on an oiled baking sheet or baking dish. Sprinkle with salt and pepper. Sprinkle the second potato with herbs or/and garlic powder.
Drizzle all the potatoes with olive oil.
Bake for 45-60 minutes. Cooking time depends on the potato variety, size, and the oven. In 30-45 minutes after cooking top the third potato with blue cheese.
Check the potatoes with a toothpick. If it comes easily, the potatoes are done and ready to be served.
