If you have never tried to make a homemade mayonnaise, I encourage you to do so. First of all it is fun to whip a jar of your own sauce. Then, you know all the ingredients you putting in. Finally, if you are using an immersion blender, your homemade mayonnaise will be ready in no time – just in 30 seconds.


Tasting result is more than satisfactory – a well balanced, gorgeous, silky, and creamy sauce that is waiting to be enjoyed.

Homemade Mayonnaise


1 ½ cups


  • 1 very fresh egg
  • 1 tsp Dijon mustard
  • 2 tsp lemon juice (or white vinegar, white balsamic vinegar, white wine vinegar)
  • ½ tsp salt
  • Dash of black pepper (optional)
  • 1 ¼ cup olive oil or canola oil (I use no odor olive oil)




Pour all the ingredients in a container / jar in the order listed in the recipe. With an immersion blender blend them for 12 seconds at the bottom of the container (where the egg is), and then the whole mixture for 20 seconds more.

Yogurt Mayonnaise


1 ¾ cups


  • 1 cup homemade mayonnaise
  • ¾ cup plain yogurt  (preferably Greek)
  • Pinch of salt
  • Pinch of white or black pepper (optional)



Mix all the ingredients.

Store the sauce in a jar in a refrigerator.


Mayonnaise with Paprika


1 cup


  • 1 cup homemade mayonnaise
  • 1 tsp sweet paprika (use hot paprika for spicy sauce)



Stir in the paprika into the mayonnaise.

Store the sauce in a jar in a refrigerator.
