This is a flavorful, tasty and quick to prepare appetizer. I like to use mozzarella, mozzarella balls or feta for this delightful dish. It is equally delicious with or without olives.

To tell the truth, marinated cheese and olives is not just an appetizer, it is a perfect addition to meat, poultry, or fish. Prosciutto, salami, crackers or good quality bread – all of these could be a good company for the bright and delicious olives and cheese. Simply top green salad leaves with this condiment and enjoy a healthy and incredibly tasty salad.

Want to create an antipasti platter? Don’t forget the marinated mozzarella and olives with Italian herbs. When planning a French dinner, make the marinade for feta with herbs de Provence. Take a jar with marinated cheese and olives to a potluck. Marinated Cheese and Olives

 

Ingredients

  • 8 oz fresh mozzarella cheese or mozzarella balls (or feta)
  • 1 can of black olives (pitted)
  • ½ bell pepper, finely chopped (optional)
  • ½ – 1 tbsp lemon juice, white wine vinegar or white balsamic vinegar
  • 2-3 tbsp extra virgin olive oil
  • 1 clove garlic, finely chopped (optional)
  • 1-2 tbsp finely chopped fresh parsley (optional)
  • 1 small shallot or 1 tablespoon finely chopped red, sweet or Spanish onion (optional)
  • Black pepper
  • Salt
  • 1-2 tbsp Italian seasoning, or pasta seasoning, or herbs de Provence

 

Preparation

Cut cheese into cubes.

Mix all the ingredients in a bowl. Let stand for 30 minutes (or longer) to develop the flavors.

Keep refrigerated in a glass container for 1-3 days.
