Another week – another salad.

I love pears. They are so versatile – with them you can make a refreshing salad, a savor side dish, delightful preserves, an elegant soup or a gorgeous dessert. This fruit goes so well with cheeses and dry meats and it is ideal for a cheese and charcuterie board.

When I am planning a steak or chicken for diner, I often prefer to serve a salad as a side dish. Pear salad with walnuts and cheese works great for this kind of meal. Sometimes I caramelize the nuts, which makes the salad special; at other times I just add them raw or use pecans or almonds. Parmesan flakes can be substituted with blue cheese, Comte chunks, goat cheese, good quality cheddar, or feta. All the choices are be equally delicious.

A touch of honey will enrich the salad with a unique taste.

Preparation

Drizzle the pear slices with lemon juice – this will prevent the pear from darkening.

Arrange the salad greens on a platter. Add the pear slices. Season the salad with salt and pepper and drizzle with olive oil. Top with the walnuts and fresh Parmesan flakes.

Optionally drizzle the salad with honey.
