From as simple as a three ingredients mixture to a more complex combination of spices, this pilaf seasoning is a staple for making the plov – a cult dish in Central Asian countries Uzbekistan and Tajikistan (former Soviet Union republics).
Even if you don’t have all the spices to make this seasoning, your pilaf will be flavorful with just a few of them: cumin, coriander and paprika, which are the main ingredients. Turmeric (today’s leader in popularity), curry powder, fenugreek, and marjoram make this aromatic mixture even more scented and complex.
Rice, couscous, farro, or cauliflower pilafs develop a new tasting dimension when infused with this flavoring. Moreover, beef, chicken, and especially lamb, seasoned with these spices create a real Central Asian or Middle Eastern tasting palette.
There is nothing complicated here – a handful of dried fruits or berries and a spoon of this miracle seasoning will create a bowl of delightful and fragrant pilaf, whether topped with meat or chicken, or just ‘as is’, without any meat.
Mix all the ingredients. Store in a tightly closed container.
- 2 tsp cumin
- 2 tsp curry powder
- 1 tbsp sweet paprika (or mix sweet and hot)
- 1 tbsp turmeric
- 1 tbsp ground coriander
- 1 tbsp marjoram
- 1 tbsp ground fenugreek, (optional)
- 2 tbsp dried barberry, (optional)
Mix all the ingredients. Store the seasoning in an airtight container.
