Well, the grill season has started and, following our family tradition, my husband and I opened the season with hamburgers. Then, we continued with steaks, lamb and, finally, with pork kabobs.
The cold weather season is in the past now. We missed our grill so much that over the last two weeks we were using it like crazy.
So, the pork kebabs. Every season I am making an effort to create a new recipe for steaks, chicken, lamb and pork.
I really like a delicious combination of pork and apples – the fruits compliment the meat making the pork dishes taste exceptional. So the idea to marinate pork pieces in apple puree turned out very successful!
Pork Kebabs in Apple Puree Marinade
- 1 ½ lb pork tenderloin
- 1 apple, peeled
- 1 medium lemon
- 1 medium onion, finely chopped
- 2-4 cloves garlic, minced
- Pinch of cayenne pepper or ½ tsp spicy paprika
- Black pepper
- 1-2 tbsp olive oil
Cut the pork tenderloin into 1 ½” pieces.
Using a blender or food processor, make the apple puree.
In a bowl, combine the pork, onion, spices, garlic, apple puree and lemon juice. Slightly mash the meat with the marinade. Cover the bowl and marinate the pork overnight. Keep it in a refrigerator.
Remove the meat from the refrigerator half an hour before grilling.
Soak wooden skewers in water for 20-40 minutes.
Arrange the pork pieces on the skewers. Grill the kebabs on medium heat for 10-15 minutes, turning occasionally.
In a small pan sauté the onions and serve with the pork kebabs.
