You may not believe just how good simple pasta with garlic bread crumbs could be!
It seems almost too straightforward, pasta and bread, but it creates a dish sure to impress. With the combination of aromatic herbs and flavorful garlic the bread crumbs take on a hearty flavor. Once the crumbs are fried, they develop a satisfying crunch and add texture to the dish. The bread can alternatively be used for gratins and casseroles to add the consistency of the food. You can also sprinkle the topping onto vegetables before baking them in the oven or on sautéed mushrooms to add another scope of flavor. One of my favorite uses for the crumbs is using them as a sort of crouton on fresh salads.
When preparing pasta with garlic bread crumbs, you may find that you have extra bread crumbs that won’t be used in the dish. These can be saved and stored easily to be used later in variety of dishes. To keep crumbs fresh all you have to do is put them in an air tight container and put it away in either the fridge or freezer depending on if you plan on storing them shortly or for a while. The crumbs will stay fresh in the freezer indefinitely and can be used on a variety of dishes but in the mean time try this deliciously simple pasta recipe.
- 1 package pasta (16 oz)
- 4 cups bread crumbs (about 8 oz of white bread)
- 4 garlic cloves, minced
- 4 tbsp. finely chopped fresh parsley
- 2 tbsp. julienned sage leaves
- 2 tbsp. finely chopped fresh marjoram (or 1 tsp. dry)
- Pinch of cayenne
- Freshly ground black pepper
- Olive oil (about 3 tbsp. for crumbs + 1-2 tbsp. for pasta)
- Parmesan or Pecorino Romano for serving, grated or flakes
Bring a large pot of generously salted water to a boil over high heat. Add spaghetti and cook pasta to al dente.
While the pasta is cooking prepare aromatic bread crumbs. Cut bread onto small pieces and grind in a food processor.
In a sauce pan heat 1 tbsp. of olive oil. Add garlic and cook for 30 seconds. Add sage and cook for another 30 seconds.
Add 2 tbsp. of olive oil, bread crumbs, parsley, marjoram, salt, black pepper, and cayenne pepper. Cook over low heat for 5 minutes, stirring. Bread crumbs should be golden and not too dry.
Drain the pasta, add 1-2 tbsp. olive oil and stir.
For one big serving pasta bowl, toss pasta with bread crumbs, add cheese on top.
For individual bowls, put the pasta in a bowl, top with bread crumbs, and cheese.
