You have probably noticed that in a hot summer everything goes slowly, and everything melts like an ice cream. All the movements are lazy, and there is nothing better in the whole world than a glass of a cold and refreshing drink or a cup of juicy fruits and berries.
My Strawberry Soup is a wonderful part of the summer menu.
I made this soup with mint and cardamom, but if you don’t like or don’t care about mint or cardamom, simply do not use them.
You still can add mint leaves for garnish – and the soup will get a special aroma.
Serve this refreshing and healthy soup in small cups, wine glasses, cups, or small ice-cream bowls with or without the spoons. Just drink it and enjoy the taste and flavor!
4 small servings
- 1 cup strawberries
- 1 cup plain yogurt
- ¼ cup sugar
- ¼ cup orange juice
- ¼ cup water or white wine for an adult version
- ½ tsp ground cardamom
- 1 small mint leaf
- Mint leaves or strawberry pieces for garnishing
Put the strawberries, yogurt, sugar, orange juice, water or wine, cardamom and the mint leaf in a blender. Blend for 15-20 seconds for a chunky soup or longer for a creamy version.
Chill or serve immediately garnished with mint leaves or sliced strawberries.
