Sweet Chili Glazed Turkey Meatloaf


When making a meatloaf I often double the ingredients. One part goes to my meatloaf, and the other – I make a tray of meatballs from the rest of the meat. I freeze them or, first, bake them, then put all the meatballs in a freezer bag and find a place for my future dinner in a freezer. When I want the meatballs for a dinner I simply cook or reheat them in my favorite sauce (onion, mushroom, tomato), serve the meatballs over pasta, rice or mashed potato and voila – we have a delicious dinner with a minimum effort.

As for the meatloaf, it is equally delicious when served as a main dish, an appetizer, or a part of a buffet. It is great for dinner, lunch, picnic, and breakfast. Olives give the meatloaf a nice texture and taste. And sweet chili sauce… oh, this wonderful sauce, it completely changes the flavor of my meatloaf to the best.

I use Frank’s RedHot Sweet Chili, which can be found in any grocery store. It is really good and contains just a few natural ingredients: water, sugar, red chili pepper, salt, garlic, starch, and vinegar.

This sweet chili glazed turkey meatloaf can be enjoyed hot from an oven, warm, at room temperature, or cold from a fridge.

Sweet Chili Glazed Turkey Meatloaf

  • 3 lb ground turkey
  • 1 egg lightly beaten
  • 4-6 oz onion chopped
  • 1-2 carrots grated
  • 3-4 garlic cloves roughly chopped
  • 1 ½ cup bread crumbs I use panko
  • salt
  • freshly ground black pepper
  • dash of cayenne pepper
  • dash of ground allspice
  • spices optional: ¼ each ground coriander, fennel, paprika
  • ¾ - 1 cup pitted olives black, green, or mixed, less or more to fill the form
  • ½ cup less or more sweet chili sauce


  1. Blend the onion and garlic in a food processor or a blender to make a very thick “sauce”.
  2. In a large bowl, mix all the ingredients except the sweet chili sauce.
  3. Preheat oven to 360 F (180 C).
  4. Fill a meatloaf or terrine pan with the ground meat. Make a deep groove in the center of the meatloaf and fill it with «ropes» of olives. 

  5. Cover the groove with ground meat and smooth the surface of the meatloaf. 

  6. Generously spread the sweet chili pepper sauce over the meatloaf.

  7. Cook for 40-45 minutes or until the inner temperature 165 F (74 C). 

  8. Let it sit for 5-10 minutes before slicing.

The ingredients quantities are for one meatloaf and a tray of meatballs (or two medium meatloaves).
