It looks like I am ready for, as French say, a ‘cheese and wine’ Friday party. There is a nice selection of world cheeses and charcuterie in my refrigerator. My homemade chicken liver pate with jelly is there too. Flavorful and zesty ‘Cyprus style’ olives have been prepared. Good honey and fig jam along with plump dry fruits and earthy walnuts are waiting on my pantry shelf. A mouthwatering savory tomato-and-onion jam is already in a jar  and being cooled on my kitchen counter. On top of that I pickled some onions and carrots.

So, all I need to do – to buy a fresh baguette, some crackers, fresh grapes and pears from the new crop (pears go so well with cheese and smoked meats), and some fancy olives from a bar section in my local grocery store. As for the wine – what are the friends for? They are invited to this party… with wine.

When I am cooking a tomato jam I prefer meaty tomatoes, but for my tomato-onion jam, any tomatoes I have on hand will work. It could be a mixture of yellow, cherry, green, ripe and unripe tomatoes. Onions really help to thicken this jam.

Tomato-onion jam is great by itself, with crackers, toasts, or fresh bread. But it is heavenly delicious when served with soft and creamy goat cheese.

You may want to change the proportion of onions and tomatoes, or serve the jam with cream cheese, fresh ricotta, burrata or mozzarella – it will be satisfying anyway.

Instructions:

In a bowl, mix chopped tomatoes with sugar and let stand for about 10-15 minutes.

In a heavy bottomed saucepan heat the olive oil. Add the onions, season them with salt and cook on low heat for 15-20 minutes.

Add the vinegar and deglaze for 5 minutes.

Add the chili pepper and garlic; cook for 1 minute.tomato-onion jam (6)

Add the tomatoes, lemon juice, herbs and spices; bring to a boil and simmer for 35-45 minutes, stirring occasionally. It should have jam consistency.

Ladle hot jam into dry jars. Close the jars with the lids. Cool.

Store jam in a refrigerator.

For a long shelf storage sterilize the jam according the instructions.

Note:

Depending on a tomato variety and quality of you pan, you may need to add ¼ cup (or more) water during last 15 minutes of preparation.

Ingredients

  • 1 lb tomatoes, preferably meaty, cut into pieces
  • 1 lb onions any type (yellow, Spanish, Sweet, red)
  • 1/4 - 1/3 cup sugar
  • 3-4 cloves garlic, minced
  • 1 jalapeno pepper, seeds removed, finely chopped
  • 2 tbsp lemon or lime juice
  • 1-2 tsp balsamic vinegar (or cider vinegar)
  • 2-3 thyme sprigs
  • 1-2 rosemary sprigs
  • 1/2 - 1 tsp salt, or to taste
  • 1/4 tsp cayenne pepper or more for spicy jam
  • 1/4 tsp ground black pepper
  • 1/8 tsp ground allspice
  • 1 tbsp olive oil

Option for Tomato-onion jam with smoked paprika:

  • 2-3 tsp smoked paprika
