I am a huge fan of Mediterranean diet. And this is definitely a Mediterranean diet dish. It is light, healthy and delicious. Both, the fish and the sauce are cooked in the same package – literally.

 

This simply prepared fish turned out beautiful looking, which I always appreciate. The trout was eaten with pleasure. Thanks to the aroma of spices and herbs, cherry tomatoes were transformed into a wonderful and flavorful sauce-salsa-chutney, whatever you call it. A highly recommended dish.

Trout with Cherry Tomatoes in Foil 

1-2 servings

Ingredients

  • 1 trout, whole, cleaned
  • 8-10 cherry tomatoes, halved
  • 4-5 dill sprigs 
  • 4-5 parsley sprigs 
  • 3-4 garlic cloves
  • 4-6 lemon slices
  • 1 tsp extra virgin olive oil
  • Salt
  • Black pepper

 

Preparation

Preheat oven to 450 F (225 C).

Smash two garlic cloves. Coarsely chop the rest of the garlic.

Rinse the fish and pat dry with paper towel.

Prepare a piece of foil; put it on a baking sheet.

Put the fish on the foil. Season the fish inside and out with salt and pepper.

Place the lemon slices, dill and smashed garlic inside the fish. Arrange the cherry tomatoes and chopped garlic next to the fish.  Season the tomatoes with salt, pepper and parsley. Top the fish with the rest of the lemon slices.

Drizzle the olive oil over the fish and tomatoes.

Fold up the foil and bake in the oven for 20 minutes. For the time will fillet for 12-15 minutes. The trout is done when it is easily pull apart into the flakes with a fork.

When opening the foil, be careful not to get burned by steam!
