Zucchini with Yogurt Sauce


This summer my first vegetable from my garden was a good size zucchini. I decided to make our family favorite zucchini dish – floured zucchini rounds. To make the cooked vegetable more flavorful I prepared a healthy yogurt sauce. Actually, two sauces.

Dusted in flour, then fried in a small amount of olive oil and served with great yogurt sauces the zucchini rounds are just gorgeous.

Zesty yogurt sauce creates an absolutely delicious tasty note.

Zucchini with Yogurt Sauce



  • 1-2 zucchini, sliced on 1 – 1 ¼ “ rounds
  • ¼ – 1/3 cup flour
  • Salt
  • Black pepper
  • Pinch of cayenne pepper (optional)
  • 1-2 tbsp finely chopped fresh parsley (optional)
  • Olive oil for frying
  • White yogurt sauce-dip for serving
  • Yellow yogurt sauce-dip for serving




Mix the flour, salt, black pepper and if using, cayenne pepper and parsley in a plastic bag.

Add the zucchini rounds to the flour and shake until the zucchini are completely covered with the flour mixture.

In a wide pan heat the olive oil.

Add the floured zucchini and fry them on both sides over medium heat until golden brown for about 2-4 minutes on each side.

Transfer onto a plate and serve with the yogurt sauces on a side.
